La spiruline n&rsquo;est cependant pas la seule algue qui m\u00e9rite d&rsquo;\u00eatre mise en avant.<\/p>\n<p>On distingue les <strong>macro-algues<\/strong> (utilis\u00e9es en cuisine) telles que les algues vertes (laitue de mer), les algues rouges (dulse, nori), les algues brunes (wakam\u00e9, haricots de mer) et les <strong>micro-algues<\/strong> (utilis\u00e9es sous forme de compl\u00e9ments alimentaires) dont font parties la spiruline, la klamath ou la chlorelle.<\/p>\n<p>Les algues, v\u00e9ritables l\u00e9gumes de la mer, pr\u00e9sentent un beau panel de nutriments: prot\u00e9ines, fibres, vitamines (A,C,E), oligo\u00e9lements (iode, fer, s\u00e9l\u00e9nium&#8230;) et min\u00e9raux (potassium, sodium, calcium, magn\u00e9sium&#8230;). Gr\u00e2ce \u00e0 leur teneur en prot\u00e9ines (8 \u00e0 60% du poids sec), les algues sont particuli\u00e8rement appr\u00e9ci\u00e9es chez les personnes ayant adopt\u00e9es un r\u00e9gime v\u00e9g\u00e9tarien ou v\u00e9g\u00e9talien. Les fibres permettent de r\u00e9guler le transit et la sati\u00e9t\u00e9. Enfin, de part leur richesse en vitamines et min\u00e9raux, les algues sont int\u00e9ressantes pour remin\u00e9raliser l&rsquo;organisme dans un contexte de fatigue ou de stress permanent ou pour diminuer l&rsquo;acidification \u00e0 l&rsquo;origine de pathologies inflammatoires r\u00e9currentes.<\/p>\n<p>Les <strong>macro-algues<\/strong> sont pour la plupart comestibles. La pr\u00e9paration culinaire la plus connue est la confection de makis dans lesquels les feuilles de Nori sont traditionnellement utilis\u00e9es. Je vous conseille \u00e9galement de tester le tartare d&rsquo;algues, tr\u00e8s simple \u00e0 r\u00e9aliser:<\/p>\n<ul>\n<li>Choisissez diff\u00e9rentes algues (laitue de mer, dulce, haricots de mer&#8230;), que vous trouverez par exemple en barquettes en magasin bio; rincez les et coupez les tr\u00e8s finement.<\/li>\n<li>Ajoutez une \u00e9chalote hach\u00e9e et une gousse d&rsquo;ail \u00e9cras\u00e9e ainsi que le jus d&rsquo;un citron, un cornichon finement coup\u00e9 et un peu d&rsquo;huile d&rsquo;olive<\/li>\n<li>Rectifiez l&rsquo;assaisonnement selon vos go\u00fbts. La spiruline est conseill\u00e9e \u00e9galement chez les personnes \u00e2g\u00e9es et les sportifs en pr\u00e9paration d&rsquo;une \u00e9preuve ou pour \u00e9viter les courbatures. La spiruline peut \u00eatre consomm\u00e9e en cure sous forme de comprim\u00e9s, en paillettes saupoudr\u00e9es sur vos plats ou en poudre dans des smoothies par exemple. La chlorelle est conseill\u00e9e pour r\u00e9guler le transit, stimuler le syst\u00e8me immunitaire, aider \u00e0 cicatriser les ulc\u00e8res d&rsquo;estomac ou d\u00e9toxifier l&rsquo;organisme des m\u00e9taux lourds.<\/p>\n<p><strong>Il existe donc de nombreuses raisons de consommer des algues.<\/strong> Cependant, elles ont \u00e9galement des contre-indications (prise d&rsquo;anti-coagulants, ph\u00e9nylc\u00e9tonurie, h\u00e9mochromatose, allergie \u00e0 l&rsquo;iode..) et ont tendance \u00e0 concentrer les pesticides et les m\u00e9taux (attention donc \u00e0 leur provenance).
